Health juice 1 – Mediterranean Diet Green Juice

Our Rainbow Diet green juice has a number of excellent health benefits – antioxidant, anti-inflammatory, heart protective and anti-cancer, for starters. It is pure plant-based nourishment, packed with soluble fibre – the kind your gut bacteria like – minerals, vitamins and glutathione to boost oxygenation.
Key green juice ingredients –
Kale – One of the most nutrient-dense plant foods; cut out the white stalk centres; it contains high levels of beta-carotene, vitamin C, B vitamins especially B6, vitamin K, magnesium, potassium, manganese, copper, calcium, alpha linolenic acid, kaempferol, quercetin, iron, indole 3 carbinol and polyphenols.
Cucumber – full of antioxidants, flavonoids, tannins, vitamin C, Vitamin K, manganese, potassium and magnesium.
Celery – Celery alkalises and is full of antioxidants and over 30 anti-inflammatory compounds. It also supports digestion.
Coriander (Cilantro) – Good for vitamin A and preserving eye and skin health, it is an anti-fungal and anti-inflammatory. It has been shown in research to have benefits in breast and prostate cancer,
Parsley – Rich in folate, antibacterial and antioxidants, this cornerstone of the Mediterranean diet is anyway used to treat high blood pressure, inflammatory diseases and supports bone health.
Ginger – An antioxidant, with anti-bacterial and anti-inflammatory benefits, research shows ginger can lower plasma glucose and cholesterol and ingredients 6-gingerol and shogaol have anti-cancer benefits.
Carrot – Full of antioxidants, beta-carotene, fibre, vitamin K and potassium. We are using a little carrot to provide sugar.
Beetroot – Good source of fibre, anthocyanins, antioxidants, folate, iron, vitamin C and manganese. Beetroot is known to lower blood pressure. We are using a little beetroot to provide sugar.
Green juice Preparation:
Wash all the ingredients. Cut all the vegetables and herbs into small chunks and pieces. Do not peel the cucumber – the peel contains the fibre. Run the blender on the highest setting. Use about 1-2 inches of fresh ginger root.
Do not use fruit in a juice. 100 ml of blended berries is 10.3 gm of sugar. 100 ml of Coca Cola is 10.9 gm.
You can add a pinch of turmeric to give the juice more ‘kick’, and consume immediately, to get the full benefit of all the natural enzymes.
If the ingredients are all organic your liver will get more of a detox benefit. If you don’t get enough ‘juice’ from the volumes you are using, try adding some chlorella powder in water and some wheatgrass. Both will greatly aid the detox.
